What makes Black Ivory Coffee so expensive?

Produced in Northern Thailand, Black Ivory Coffee is unlike any ordinary cup of joe. Its hefty price tag is attributed to its rare production process, limited supply, and the unique role of elephants in crafting this extraordinary coffee.

Instead of traditional processing methods, Black Ivory Coffee beans undergo a fascinating journey—they are eaten by elephants and later collected from their waste. During digestion, the beans are naturally fermented in the elephant’s stomach, where enzymes break down the protein content (which is responsible for bitterness in coffee). The result is an exceptionally smooth, mellow, and earthy flavour profile that is nearly impossible to replicate through artificial methods.

The role of elephants

The elephants are cared for at the Golden Triangle Asian Elephant Foundation, an elephant sanctuary that ensures ethical treatment of the animals. The coffee production process is slow and meticulous—only a small quantity of beans is produced each year, which significantly drives up the cost.

It takes approximately 33 pounds of raw coffee cherries to produce just one pound of Black Ivory Coffee, due to losses during digestion, harvesting, and selection of usable beans. This high labour intensity, combined with the limited annual production (usually under 500 pounds), makes it a true luxury item.
